5 oz. Dorito Chips (your favorite flavor)
2 large eggs
1 pound- skinless white fish fillets (we use either white fish or tilapia)
Lightly spray a baking sheet with non-stick spray. Preheat oven to 450 degrees. Put the chips in a zip top bag and crush to the consistency of a pebble. Whisk together the eggs and mustard. Dip fish on both sides in the egg mixture. Then shake in the bag of crushed chips until coated. Place fish on pan (not touching) and bake for 15-20 minutes until the fish is crisp and firm to the touch. Serves 4.
