Eggplant Stacks

Egg Plant Stacks

 2 young eggplants, sliced 1/2  in. thick

1/3 c. olive oil

Salt and pepper

8 slices ham (optional)

1 jar Sacheli’s Sunday Sauce

8 to 10 basil leaves

1 1b mozzarella sliced

Brush both sides of eggplant with oil, season with salt and pepper and grill until tender (10 minutes).  Transfer to plate. Grill Ham (1 minute). Pour some sauce into baking dish, stack eggplant, ham and cheese into 4 stacks top each with basil leaf, sauce and cheese. Set baking dish on grill and cover until cheese is melted and slightly bubbly.

Serves 4.

** you can do this on the stove top and in your

oven also.  In that case cook the egg plant in a fry pan on the stove until tender.  Stack as described, then put in the oven under the broiler until the cheese is slightly browned and bubbly.

***This makes a great sandwich when put between 2 pieces of Italian bread!
