Limey Shrimp Spread

 

8 oz. cream cheese, softened

1 jar onion balsamic jelly

6 T. lime juice

1 can mini shrimp, drained

3 T. toasted coconut

 

Preheat oven to 350 degrees.  Combine onion jelly with the lime juice.  Mix half of the onion jelly mixture into the cream cheese.  Spread the cheese into an 8 inch spring form pan or baking dish sprayed liberally with non stick spray.  Top the cheese with the shrimp and glaze the top with the remaining onion jelly mixture.  Bake for 15 minutes, then cool and chill for at least an hour.  If using a spring form pan remove it from the pan onto a serving plate.  Top with coconut just prior to serving.  Serve with slices of crusty bread or crackers.
