Meat Loaf

 

2 lbs. ground beef

2 eggs

2 cups Italian seasoned bread crumbs

1 small onion, diced

2 cloves garlic, minced

1 cup Parmesan cheese, grated

1/2 cup carrot, shredded

1/4 t. salt

1/4 t. ground black pepper

3 T. +1/4 cup Sacheli Brother’s Hot Ketchup

1 T + 3 T. Grandma Annie’s or Tony’s Mustard

 

Preheat oven to 350 degrees.  Using your hands or a wooden spoon mix together the ground beef with the eggs, onion, garlic, parmesan cheese, carrot, salt, pepper, 3 tablespoons of Hot Ketchup and 1 tablespoon mustard.  Put the meat into a loaf pan and spread the remaining 1/4 cup hot ketchup and 3 tablespoons of mustard on top to glaze the meat.  Bake until it’s no longer pink in the center (at least 160 degrees) about 1 hour.
