Squash Pancakes

3 cups grated squash (zucchini or summer squash)

3/4 cup Parmesan cheese- grated

1 egg

1 cup biscuit mix

1/2 teaspoon garlic salt

3/4 to 1 cup of milk

Sacheli’s Cheese spread (in your favorite flavor) to top


Mix all ingredients, except cheese spread, together.  It makes a thin pancake consistency.  Preheat a non stick griddle or frying pan. put on in tablespoon to 2 tablespoon size.  Flip when bubbles form on top and cook until golden.  Serve with cheese spread. Makes a meal for 4 or appetizers for 12-15.
