Stuffed Patty Pan Squash


1 lb ground beef

1/2 cup diced onion

4 patty pan squashes

1 cup cooked rice

1 c. Sacheli Bros Ketchup

3 Tbs. mustard

2 Tbs. vinegar (white)

Salt and pepper to taste



Brown the beef with the onion then drain off the grease. Poke a few holes in the top of each squash with a fork and microwave about 10 minutes until tender. Gently cut the top off the squashes and scoop out some of the flesh. Stir the squash in with the remaining ingredients. Divide and fill each cavity with mixture. Serve hot.
